Personally, I love enjoying one or two of these bad boys before hitting the gym. They’re also a great addition to my morning commute. The only problem is my toddler begging for a bite in the backseat! #momprobs

These peanut butter energy bites are also an amazing substitute for sweets. Instead of scooping a bowl of ice cream, eat an energy bite and I guarantee your sugar craving will be satisfied. If not, eat another!

Finally, the moment you’ve all been waiting for! Add these ingredients to your shopping list and get cooking!

Ingredients:

  • 2 cups oat flour*
  • 1 cup peanut butter (or other nut  butter for a paleo option)*
  • 1/2 cup honey*
  • 1 cup pitted dates
  • 1 tsp vanilla
  • Melted dark chocolate (optional)

Method:

  1. Add ingredients except dark chocolate (if using) into a food processor. Mix until a smooth, dough-like texture is formed. About 1-2 minutes.
  2. Spoon out batter and roll into balls one tablespoon at a time. Place on a baking sheet and freeze for 30 minutes.
  3. Place dark chocolate into a microwave-safe bowl and heat in 15-second increments until melted. Drizzle over the energy bites.
  4. Store in an air-tight container and keep refrigerated for up to one week. Makes 20-25 balls.

* If you don’t have oat flour, you can use rolled oats to make it yourself. Measure two cups of oats and blend in the food processor until a flour-like consistency.

* For a paleo option, use another type of nut butter like almond butter or cashew butter.

* For a vegan option, use maple syrup instead of honey.
